Crispy Tofu Veggies with Peanut Sauce

Ingredients

  • Brown Rice
  • Broccoli
  • Red Peppers
  • Tofu
  • Tamari / Soy Sauce
  • Cornmeal / Corn Flour
  • Coriander
  • Spring Onions
  • Peanut Sauce
    • Vegetable Broth (1 cup)
    • Peanut Butter (3 Tbsp)
    • Rice Vinegar (1 Tbsp)
    • Tamari / Soy (2 Tbsp)
    • Garlic Powder (1/2 Tsp)

Method

  • Cook the brown rice with water.
  • Cut up broccoli and red peppers and put on baking tray / rack.
  • Cut Tofu into bite size pieces.
  • Marinade Tofu in Tamari / Soy Sauce.
  • Roll Tofu in Cornmeal / Cornflour and add to baking tray
  • Bake veggies and Tofu in oven at 400F for 25mins.
  • To make the peanut sauce, combine all ingredients into a bowl and mix until the peanut butter is broken down.
  • Transfer to a pan and reduce down over a medium heat until the sauce has thickened up.
  • Serve the rice, veg and tofu on a plate with peanut sauce drizzled on top and finish with garnish. Enjoy 🙂
