Ingredients
- Brown Rice
- Broccoli
- Red Peppers
- Tofu
- Tamari / Soy Sauce
- Cornmeal / Corn Flour
- Coriander
- Spring Onions
- Peanut Sauce
- Vegetable Broth (1 cup)
- Peanut Butter (3 Tbsp)
- Rice Vinegar (1 Tbsp)
- Tamari / Soy (2 Tbsp)
- Garlic Powder (1/2 Tsp)
Method
- Cook the brown rice with water.
- Cut up broccoli and red peppers and put on baking tray / rack.
- Cut Tofu into bite size pieces.
- Marinade Tofu in Tamari / Soy Sauce.
- Roll Tofu in Cornmeal / Cornflour and add to baking tray
- Bake veggies and Tofu in oven at 400F for 25mins.
- To make the peanut sauce, combine all ingredients into a bowl and mix until the peanut butter is broken down.
- Transfer to a pan and reduce down over a medium heat until the sauce has thickened up.
- Serve the rice, veg and tofu on a plate with peanut sauce drizzled on top and finish with garnish. Enjoy 🙂
